In a small saucepan, heat sugar and amaretto over medium heat, stirring frequently, until sugar dissolves, 4 to 5 minutes. Add cherries, and cook until cherries have softened and are fork-tender, 9 to 10 minutes, adjusting heat if needed. Pour cherry mixture into a medium bowl; cover and refrigerate until cool, at least 1 hour or up to 4 hours. Drain through a fine-mesh sieve before use, reserving liquid for Cherry Amaretto Glaze.
