Miso Caramel
- ½ cup (100 grams) granulated sugar
- ¼ cup (60 grams) soy milk
- 2 tablespoons (32 grams) white miso
- 1 teaspoon (4 grams) vanilla extract
- In a small saucepan, whisk together all ingredients. Cook over medium heat, stirring occasionally, until sugar turns amber colored, about 5 minutes. Let cool completely.
