Ganache Filling
- ½ cup (120 grams) heavy whipping cream
- ⅓ cup (76 grams) unsalted butter
- 3 tablespoons (36 grams) granulated sugar
- ¼ teaspoon kosher salt
- 1 cup (170 grams) white chocolate morsels
- In a small saucepan, bring cream, butter, sugar, and salt to a simmer over medium heat. Place white chocolate morsels in a medium bowl; pour hot cream over morsels. Let stand for 1 minute. Slowly whisk chocolate mixture, starting in center and working your way to edges, until smooth. Refrigerate until chilled and spreadable, at least 2 hours.
