Chestnut Praline Paste
- ½ cup (80 grams) roasted peeled chestnuts*
- ¼ cup (60 grams) water
- 1 tablespoon (12 grams) granulated sugar
- ¼ teaspoon (1 gram) vanilla extract*
- In a medium saucepan, bring all ingredients to a boil over medium heat. Reduce heat to low; cover and simmer until chestnuts are softened, about 30 minutes.
- Transfer to the container of a blender; pulse until smooth. (Alternatively, an immersion blender can be used.) Use immediately, or refrigerate in an airtight container for up to
