Lemon Cream
 
Makes about 3 cups
Ingredients
  • 1½ cups heavy whipping cream
  • 2⁄3 cup (80 grams) confectioners’ sugar
  • 2 teaspoons lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • ¼ teaspoon (0.75 gram) kosher salt
Instructions
  1. In the bowl of a stand mixer fitted with the whisk attachment, beat cream and confectioners’ sugar at medium speed until soft peaks form. Add lemon zest and juice, vanilla, and salt, beating to combine.
