Hydrated Cranberries

Makes 1½ cups

Ingredients
  

  • cups (145 grams) dried cranberries
  • 1 teaspoon (4 grams) tightly packed orange zest
  • cup (80 grams) fresh orange juice
  • 2 tablespoons (28 grams) firmly packed dark brown sugar
  • ¼ teaspoon kosher salt

Instructions

  • In a small saucepan, stir together all ingredients. Bring to a gentle boil over medium heat, stirring occasionally, until thickened, about 5 minutes.
