Ingredients

(840 grams) cold heavy whipping cream

(100 grams) granulated sugar

(4 grams) vanilla extract

Instructions
In the bowl of a stand mixer fitted with the whisk attachment, beat all ingredients at medium-high speed until medium-stiff peaks form. Use immediately.
